The harvest is the moment when the
grape is most at risk and the quality of the resulting wine
will depend on the phenolic maturity of the grape:
At the Domaine de Graillefiot, our policy is:
- Hand picking: carried out on the very day when phenolic
maturity is attained. This is defined by a series of samples
taken over a two week period leading up to the harvest.
In this way, it is possible to improve, even further,
the quality of the fruit with the help of a testing procedure
elaborated by ICV (Institut Coopératif Viticole)
which identifies the best day for the harvest and the
best method for macerating the fruit.
The harvesters carry out a first selection of the grapes
when picking. They reject any fruit which is not in perfect
condition.
A quad bike with a trailer carries small quantities (30
litre tubs) of freshly harvested grapes directly to the
winery. This helps to avoid the risk of deterioration of
the fruit as a result of oxidation.
And then the winemaker's work begins...
