The 7 Golden Rules

7

The harvest is the moment when the grape is most at risk and the quality of the resulting wine will depend on the phenolic maturity of the grape:

At the Domaine de Graillefiot, our policy is:

  • Hand picking: carried out on the very day when phenolic maturity is attained. This is defined by a series of samples taken over a two week period leading up to the harvest. In this way, it is possible to improve, even further, the quality of the fruit with the help of a testing procedure elaborated by ICV (Institut Coopératif Viticole) which identifies the best day for the harvest and the best method for macerating the fruit.

The harvesters carry out a first selection of the grapes when picking. They reject any fruit which is not in perfect condition.

A quad bike with a trailer carries small quantities (30 litre tubs) of freshly harvested grapes directly to the winery. This helps to avoid the risk of deterioration of the fruit as a result of oxidation.

And then the winemaker's work begins...

Only a full and detailed explanation on site in our winery will allow you to fully understand the constant desire for perfection which is our driving force.

We look forward to meeting you and guarantee you a warm welcome.

Personal note:
Our wine possesses health-giving virtues and, as is the case for all great natural red wines, can help prevent certain diseases...

Beware, excessive alcohol consumption can be dangerous to your health.
